Considering the whole farmstead, in particular the kitchen, even now we can evaluate the extent and importance of the farm in days gone by. Originally the part of the building that was lived in hardly seemed like a finished home, odorous as the fields in which it was immersed. The farmer’s house was sober and even poor, built on two floors with an external staircase, and lacking a bathroom, running water and electricity. On the ground floor were the stalls for the cows (of the local Marchigiana breed), pigs, sheep and other farmyard animals: in the cold winter months their presence helped to heat the house above. On the first floor there was a large kitchen, off which led the bedrooms. Opposite the stables there was usually another two-storey building used as a storage shed below with haybarn above. There was also an unpaved cantina (wine cellar), a single-storey room often at basement level and facing north, with unrendered stone walls and small windows (if any) to keep it as cool as possible; plus another similar room that was somewhat lighter used as a store-room for vegetables and other produce.
